Manufacturing process
Our ceremonial matcha comes from Uji near Kyoto – a region that has stood for the highest tea quality for centuries. The tea plants are carefully shaded for several weeks before harvest. This increases the chlorophyll and L-theanine content, which gives the matcha its intense green color, natural sweetness, and fine umami.
For our Ceremonial Grade, only the delicate, young leaves of the first harvest are used. After gentle steaming and drying, stems and leaf veins are removed, resulting in pure tencha.
The tencha is then traditionally slowly ground into an ultrafine powder in granite stone mills. This gentle process preserves aroma, color, and nutrients – and ensures the particularly creamy texture and the clear, elegant taste of our matcha.
